Any categories that you have set up in your Categories settings and have "Enable for site" selected will appear on the shop front in the categories section when the customer goes to filter your offerings. If you have categories set up for your offerings but you don't want these categories to be visible on the shop front, instead you want to be able to use these internally only, then you can utilise the "Hide categories" feature.
To do this head to Settings > Shop settings > Scroll to "Features" section > here you will see a toggle called "Hide categories"...
Once you toggle "Hide categories" on, another section will appear called "Hidden categories". This will list all the categories set up in your settings that are enabled for your site. You can then choose from the drop down menu regarding which ones you want to hide from the shop front. Simply tick the categories you wish to hide. Once you have selected the categories you wish to hide, remember to scroll to the bottom of the page and "Save" to save any changes.
This then allows you to have some categories that are set up to be used internally only as you can hide them from the shop front, so the name of the category is not visible to the customer when accessing your shop front...
